Menu Planning - June 6-12

So one of the tricks to saving money and time I have found very useful is to plan my weekly menu out in advance.  Make sure to make your menu plan before heading to the grocery store so you can stock up on all the necessary ingredients.  As times goes by more and more of my menus will include links but since I'm trying to create and sample some new recipes right now most will be posted after. 

I plan to post this with I'm an Organizing Junkie's Meal Plan Monday post. But I'm a little ahead.

Sunday - June 6th
Asian Crock pot Chicken
Bok Choy*
Steamed Rice

Monday, June 7th
Slow Cooker Green Chili Chicken Fajitas with onions and red bell peppers*
Black Beans and Rice

Tuesday, June 8th
Slow Cooker Scalloped Potatoes* (need to find a recipe for this so if anyone has one please share!)
Green Beans

Wednesday, June 9th
Spaghetti with Sausage and Red Sauce
Using chunky marina with olives and spinach that I already have in the freezer to save some time.

Thursday, June 10th
Cheesy Ham & Rice Casserole
Using leftover ham from Tuesday in a tried and true family classic.

Friday, June 11th or Saturday, June 12th
Green Garden Salad with Popcorn Chicken Salad*

  • Since I work almost full time I just plan dinners.  I try to cook enough at each meal to have left overs for both my husband and I to take for lunch the following day. If it works out and I have more than two portions remaining I freeze the additional so it can be a homemade frozen meal.
  • Fridays and Saturdays can get a little crazy at our house so I generally just plan one meal and cook on one or the other day.  Also if I know a week is going to be busy, I sometimes just plan 3-4 meals and plan to have more leftovers to carry us through the busy nights.
  • Items with asterisk use ingredients from my co-op produce basket.
